Quinoa Pomegranate Salad with Hemp Seed
I have been in love with pomegranates since the first time I had one at 6 years old. Back then they were only available once a year and were a total treat found only at Asian markets and fruit stands. Now you can find pomegranates almost year round thanks to domestic and international production. The IsaCrunch Hemp Seeds adds a delicious nutty flavor, fabulous nutrition and 20 grams of protein to this recipe.
Quinoa Pomegranate Salad with Hemp Seeds
1 cup quinoa
1 whole pomegranate
1/2 cup of IsaCrunch hemp seeds with ionic alfalfa
1/2 a red bell pepper, small dice
3 tablespoons fresh parsley, chopped
3 tablespoons fresh cilantro, chopped
1 tablespoon fresh oregano, chopped
1 tablespoon of onion, finely diced (or scallion)
2 tablespoons fresh cilantro/coriander chopped
1 teaspoon garlic, grated
1 tablepoon apple cider vinegar
1 lemon, juiced and zested
1 teaspoon of honey
5 tablespoons of extra virgin olive oil
1 teaspoon Thai yellow curry paste (available in Asian markets)
1 teaspoon ginger powder or 1 tablespoon of grated, fresh ginger
1/4 teaspoon of coriander powder
pinch of nutmeg and cinnamon
Black and salt to taste
Cook the quinoa until it's just tender enough to chew. Turning of the heat and leaving a lid on just before it's done can ensure you don't over cook it.
Drain well in a fine sieve or colander and cool down

In a bowl, combine the cooled quinoa, and all of the other ingredients except the pomegranate seeds.
Mix well, adjust the seasonings and add in the pomegranate last and mix for a few more seconds. Serve right away or chill in the fridge for a few more hours.
No pomegranate seeds? Then dried cranberries, blueberries or chopped apricots can work. As will fresh orange or diced apple.
You can add an assortment of different colored peppers, red onion vs white, and use a different vinegar if you like. Middle Easter stores sell pomegranate syrup and vinegars to replace the honey or apple cider vinegar with. Basically have fun and make it yours.
